Winemaker's note

Kosmos is a tribute to two key cosmic bodies in organic wine growing, namely the sun and the moon. The two are combined to create the symbol of the endless cosmos, 888. This wine is made from organically-grown Grenache, Syrah and Mourvèdre vines in the south of France and is matured in French oak barrels.

Winegrower's note

The blend is made exclusively with grapes from organic vineyards where mechanical action is limited to the maximum. The leaves are removed before the harvest and the grapes are picked at perfect maturity to extract the maximum potential from each grape variety. The grapes are meticulously sorted during the harvest and when they arrive at the winery. The grapes are destemmed and pressed before being put into vats. Each grape variety is vinified separately, the temperatures are precisely controlled to bring the maximum of aromas. We practice a gentle maceration to extract the maximum of fruit and preserve the specificities of each grape variety. Once the malolactic fermentation is over, the wine is aged in barrels for fifteen months.

Tasting notes

The wine has a beautifully deep colour. Elegant and complex on the nose: garrigue, Morello cherry, cocoa, soft spice. Liquorice, bay leaf, menthol and vanilla aromas. The wine is full, rounded, warming and tasty on the palate, structured by very refined, pleasant and velvety tannins supported by beautiful freshness.

Food and Wine Pairing

Serve at 18°C with grilled meats or poultry.
