Winegrower's note
The remarkable quality of this cuvée lies in the exceptional quality of the old Carignan and Syrah vines. Harvesting is manual and begins when the grapes have reached maturity. Some of the Syrah and Carignan are vinified in whole bunches maceration. Traditional maceration is carried out on the other grape varieties. The wines are blended after malolactic fermentation and then put into 225-litre Bordeaux barrels in our cellar for 12 months of maturation. The wine is then kept for 12 months before being sold on the market.
Tasting notes
Deep garnet. Notes of toast, liquorice and cloves. Powerful and elegant aromas of jammy fruit, sweet spices and roasting. Round on the palate and the tannins are melted, it ends with a long and aromatic finish.
Food and Wine Pairing
Decant and serve at 16°C with a rack of lamb, game or ripened cheese.
